KDA_3_30211A1a - --In the WIC on a shelf there was a box of precooked bacon being stored directly on an open bag of ready to eat lettuce leaves. An employee placed the box on them this morning. COS-rearranged items. (Note: no leakage detected).
KDA_3_30211A1b - --In the WIC on a shelf there were 3 square metal food grade containers of ready to queso being stored in between 1 box of raw bacon and one metal food grade container of raw ground beef. COS-rearranged items. (Note: the box was taped shut and the metal container of raw ground beef had a lid and sealed tightly).
KDA_3_50116A2 - --In the Whirlpool refrigerator there was a plastic food grade container of sour cream at 45.3F and raw bacon wraps at 46.4F. The refrigerator door was cracked open due to catching on the edge of the make table. It was cracked opened for less than 2 hours. The ambient air temperature of the unit was reading 38.1F. COS-moved the unit over and kept door shut.
KDA_3_50118A1 - --In the Whirlpool refrigerator there was a plastic container of potato salad with an expiration date of 8/22/15. There was also a plastic container of cottage cheese with an expiration date of 8/12/15. Both items were held past their expiration dates. COS-discarded.
KDA_4_60111A - --On the utensil rack there was a metal spatula with dried food debris on the food contact surface and stored clean. There were also 3 metal square food grade containers with sticker residue on the outside of one container and wet food debris on the inside of another container and stacked clean. On the rack above the 3 compartment sink there was one large round metal bowl with dried food debris on the inside and stored clean. On the magnetic strip there was one knife with oil residue left on the blade and stored clean. COS-moved all items to the ware wash area.
KDA_4_60111C - --There is dust build up on the fan blowers in the WIC. (An employee will clean them today).
