- KDA_3_30212 - --In the Central cooler there are unlabeled squirt bottles identified as containing dressings. There is a shaker of a white powder at the coffee machine that was identified as sugar. There is an unlabeled rolling tub of brown-ish powder that was identified as wheat flour.
- KDA_3_30414B1 - --There is a wet wiping cloth sitting out on the counter next to the sink with an attached garbage disposal near the walk-ins.
- KDA_3_30511A1 - --In the walk-in-freezer there are tubes of frozen hamburger stored underneath a drip in the freezer equipment. There is frozen ice on the hamburger packages where they have been dripped on. There does not appear to be any contamination reaching the inside of the packages.
- KDA_3_50116A2 - --The windowed Turbo Air Cooler (The Ala Cart Cooler) is measuring 47.7 F ambient temperature. There are items in the cooler not measuring within required cold holding temperatures. They are as follows: 1 Parfait - 42.7 F 10 Cheese Sticks - 50.8 F 2 Yogurts - 49.5 F A kitchen employee said she believed that all these items had been in the cooler since some time yesterday. Corrected on Site (COS) - all items were discarded. The dial on the cooler was checked and it is set for its coldest setting. A technician is being called to come work on this cooler.
- KDA_3_50118A1 - --In the windowed Turbo Air Cooler (Ala Cart Cooler) there is a single homemade parfait dated 10/1. This was identified as the day the parfait was made. COS - the parfait was discarded.
- KDA_4_20211A2 - --The lids to the flour, sugar, and wheat flour rolling tubs are cracked along the edges. There is a single rubber spatula that is fraying along the edge. There are two food containers in the dry storage closet that are cracked (a clear one and a black one).
- KDA_4_204112A - --The thermometer in the windowed Turbo Air Cooler (Ala Cart Cooler) is placed in the very back of the cooler rather than in the front where it will be warmest.
- KDA_4_30111 - --The windowed Turbo Air Cooler (The Ala Cart Cooler) is measuring above required cold holding temperatures (47.8 F). Upon speaking with staff, it had been open quite a bit this morning during the breakfast. The cooler was left closed approximately 30 minutes after this and the minimum temperature had only gotten down to 47.7 F. The dial was checked by the kitchen manager and the cooler is on its coldest setting. A technician has been called to work on this.
- KDA_4_50111A - --There is a drip in the walk-in-freezer that is dripping a puddle/pile of ice in the cooler.
- KDA_4_50213A - --In the walk-in-cooler there is a single-use plastic strawberry container being reused to store cheese sauce.
- KDA_4_60111A - --There are spots of food debris on the back of the blade on the meat slicer. An employee said that the meat slicer had no yet been used today. It was being stored covered as cleaned.
- KDA_4_60111C - --The fan in the ware washing room has dust accumulation on the sides of the fan cover and slight accumulation on the fan blades.
- KDA_4_90311C - --There is a single stack of paper trays next to the microwave in the kitchen, and a single styrofoam to-go container below the steam table. They are stored outside of their original protective packaging and are neither covered nor inverted.
- KDA_4_90312A - --There is a cart of inverted lunch trays being stored as clean next to the hand sink in the ware washing area. It is difficult to not accidentally splash these clean dishes while washing hands.
- KDA_5_20411A - --In a room directly across from the kitchen there is an ice machine. There is no hand sink in the room with the ice machine. There is a single door between the kitchen and the ice machine, but this door is constantly kept open to allow air circulation for the ice machine to run properly (Per staff). A staff member said that the ice machine was previously kept in the concession stand room where there is a hand sink, but it was getting too warm and causing the ice machine to malfunction in the room when it was closed down with the door shuts so the ice machine was moved. Corrected on Site (COS) - a variance request is being completed today for the lack of a hand sink in this room. The kitchen staff always wash their hands in the kitchen (the two kitchen hand sinks are approximately 50 feet away) prior to scooping ice in the ice machine room and have no blocks between them and the ice machine so long as the door is kept open, which they have stated it is always kept open.
- KDA_Defacto - --At the mop sink there is an AVB installed with a Y Splitter with shut off valves downstream of it. One side of the splitter has a hose connecting to a chemical dispenser with a built in air gap. The other side has a hose that hangs down but is outside of the flood rim of the mop sink. --Central Cooler: Yogurt - 38.2 F, Milk Cooler: Milk - 44.6 F (Note, this cooler has been open approximately 30 minutes during breakfast), Walk-in-Cooler: Cheese - 40.2 F --Chlorine test strips were available during inspection. --Commercially prepared, precooked chicken being heated for the first time for hot holding and serving with lunch - 154.7 F --Frozen chicken was thawed as part of the cooking process. --Frozen goods received frozen. --In-use dishwasher - 50ppm Chlorine --Steam Table: Breakfast Sliders - 134.9 F --There is a very large cooler in the dry storage closet that does not fit in the ware washing equipment. A kitchen staff member said they have not used this cooler at all in the past two years.
