KDA_3_30111B - --Observed Chef use his bare hand to touch the RTE cooked taco meat. COS Educated Chef, section of taco meat was discarded.
KDA_3_50116A2 - --At the fryer station, buttermilk was stored in a metal pan on ice. The buttermilk had a measured temperature of 46F. COS Educated Chef on ice bath. Chef added water to ice. At the fryer station MT, ham in plastic bag had a measured temperature of 44F. PIC said it was put in the MT at 9am. COS Added a ice on top of the ham for rapid cooling.
KDA_4_20211A2 - --Stacked and stored as clean, plastic food contact containers had cracks on the interior surface. COS Containers were discarded.
KDA_4_60111A - --Stacked and stored as clean, plastic food contact containers was had dried food residue and visible food on the interior and exterior surface. COS Containers were removed and place in the warewashing to be washed, rinsed, and sanitized.
