  • KDA_3_30414B1 - --There were several wet cloths sitting on the food line that employees were using to wipe up food spills. Educated on being able to keep dry clothes at food prep line. COS-cloths were put in cloth bucket.
  • KDA_3_50116A2 - --In the cash register area the milk cooler reach in, single serve bowls of lettuce salad: 44.8F, 45.4F, 45.2F, 46.3F. Person in charge said these had been made at 2AM. In the reach in unit locate by food prep sink(SE), sliced tomatoes 47.8F, shredded lettuce 47.1F, leaf lettuce 46.8F. Person in charge said these items were prepared at 7AM. Shredded lettuce 44.5F, 47.2, 49F, 48F. shredded cheese 48.6F, 47F and 49.7F. Person in charge said these items had been prepared at 7:30AM and made on site breakfast burritos(egg,sausage and cheese) 44.9F, 46.2F. Person in charge said burritos had been made at 10:49AM. In the walk in cooler, made on site burritos 44.6F. Person in charge said the burritos were made at 10:49AM and that the items that go into the burritos are cold when they are made. Inspector noticed that they were putting 22 in a pan and putting a lid on them. Educated them on not putting as many in a pan and leaving lid off till they cool back down. COS-all burritos were placed in walk in freezer to cool to 41F. Ambient of SE reach in at the start of taking temperature in that reach in was 54.6F and at the end it was 39.2F. Person in charge turned the thermostat down.
  • KDA_3_50116B - --In the reach in unit near the food prep sink(SE). There were two flats of raw shell eggs, the flat on the bottom egg was 49.5F. The flat on top of the other flat was 47.9F. Person in charge said these had been in the reach in for a day or two. COS- eggs were voluntarily discarded.
  • KDA_4_20211A2 - --In the reach in cooler located near the food prep sink(SE), two containers with food stored in them had cracks on the lids. COS-lids were discarded.
  • KDA_4_204112B - --There was no thermometer in the reach in cooler located near the food prep sink (SE).
  • KDA_4_30111 - --The reach in cooler unit, ambient was 54.6F. At the end of taking temperatures in that reach in, ambient was down to 39.2F. COS-person in charge turned thermostat down.
  • KDA_4_50111A - --The deflector in the ice machine, is missing its screws and hanging down.
  • KDA_4_60111A - --In the reach cooler located by the food prep sink(SE), there were five containers with sticker residue. COS-containers were emptied and placed to be rewashed.
  • KDA_4_90311A - --In the storage area, there was a box of single serve hot cups that were stored on the floor. By the office, there was a box of single serve cups stored on the floor. COS-cups were placed off the ground.
  • KDA_6_30114 - --There is no hand washing sign at the hand washing sink near the drive through. COS-inspector left sign.
  • KDA_6_50112A - --The vent covers through out the kitchen have an accumulation of dust.
  • KDA_Defacto - --Ambient of the Frappa mixture reach in, 41.7F. Ambient of the coffee machine reach in, 37.8F. Ambient of milk cooler reach in, 42.3F. Ice cream mixture in ice cream machine 37.6 South side McCall reach in, pancakes 35.4F. In the walk in cooler, egg patty 38.8F. --Frozen food is frozen. --Hamburger patty cooking on the grill 182.9F. --South steam table, sausage patty 155.6F. Make table near the office, rib patty 144.6F. North side steam table, rib in BBQ sauce 146.2F. --The sanitizing cloth bucket was 100PPM chlorine.
