3-501.17(A) - --In the Avantco cooler there are three containers of beans that are dated 11/25. The owner called the employee who handled to beans and verified that these were made and frozen 11/25. They were thawed today, 12/2/15. COS - she is updated the date marking appropriately. KDA_3_30212 - --There are unlabeled containers that the owner verified were flour, sugar, and cornmeal. Let her know that these need to be labeled. KDA_3_30412F - --Scoops for the hot held items are stored in water measuring 82.3 F. KDA_3_30512 - --There are sweet potatoes in boxes, macaroni noodles in a box, and containers of oil and vanilla topping being stored on the floor in the restroom. KDA_3_50118A2 - --There are two pans of cooked ribs in the Avantco cooler that do not have dates on them. The owner said these were smoked on Monday (11/30/15). COS - she dated them. KDA_4_30112B - --There are large coolers used for transporting food to caterings in the dry storage unit outside that are too large to fit inside of the 3 vat sink. Went over the owner's washing process for these coolers today. COS - she is completing a variance request during the inspection. Variance is being submitted via email today. KDA_4_70211 - --An employee was doing dishes. She sprayed a bowl with a clorox bleach spray (not approved for use on food contact surfaces) and then washed the bowl with soap and water under the faucet. She then set the bowl to the side to air dry. Corrected on Site (COS) - explained that the sanitizing step needs to come last with an approved sanitizer for food contact surfaces. A sink of quaternary ammonia sanitizer was made (400ppm, per sanitizer label) and the dishes were re-sanitized. KDA_4_90311A - --In the outside dry storage unit there are boxes of single-use items (cups, trays, etc) being stored directly on the floor. KDA_5_40211 - --There were bundles of collard greens sitting in the far right vat of the 3 vat sink upon beginning inspection. This vat of the sink is directly plumbed into the sewage system. The far left vat has an air gap, but there are dishes in it. The owner said she knows that is her food sink, she just had the collard greens sitting in the other one for the time being. COS - she cleaned and sanitized the left vat and moved the collard greens out of the directly plumbed sink. KDA_5_501113 - --The outdoor trashcan by the smoker does not have a lid. KDA_6_20214 - --The restroom door is not self-closing. Note - it is being kept closed between uses. KDA_6_30111 - --There is no soap available at the hand sink in the kitchen. They are using the soap for the 3 vat sink for the time being. Requested they get soap to keep at the hand sink. KDA_6_30112 - --There are no paper towels at the hand sink in the kitchen or in the restroom. Let the owner know that both sinks need to have paper towels available. KDA_7_10111 - --There is an unlabeled bottle below the 3 vat sink. The owner verified these were clorox wipes. They are in their original container, but the manufacturer's labeling has come off. Let her know this needed to be labeled. Owner said she likes using clorox, let her know she is welcome to switch to a bleach/chlorine sanitizer that is approved for food contact surfaces if she would like to, and to be sure she has chlorine test strips if she does switch. --Reheating Meat Loaf - 167.1 F --Sales tax registration certificate not available, verbally verified ownership. --There are "Mom's Cha-Cha" on a shelf in the restaurant. They are jarred on site, per the owner. She said they are personal use only that she eats/gives to her family, but not anything she would sell or use in items she sells. She merely prepares them in her commercial kitchen because it is convenient. --There is no mop sink. The owner has an approved variance for dumping mop water in the toilet. --Whirlpool Cooler: Yogurt - 41.4 F Avantco Cooler: Brisket - 38.7 F There is butter sitting out on the counter.
