COS-PIC chose to discard Cooked egg rolls were being held out on the counter at 50.1F. The PIC stated the egg rolls had been taken out of the WIC 1 hour prior. COS-PIC moved egg rolls to the WIC In the make table, cooked noodles measured 47.2F, raw beef measured 45.3F, raw chicken measured 45.5F. The PIC stated the PHFs had been in the cooler for 3.5 hours. The ambient temperature of the unit measured 43.9F. COS-PIC placed ice in all of the containers to rapidly cool and place the containers in the WIC.
- KDA_4_30111 - --The make table is not holding PHFs at 41F or below. The ambient temperature of the unit measured 43.9F. COS-Advised to not use the unit until it can be fixed.
- KDA_4_60111C - --All of the equipment in the kitchen is covered in layers of old food, grease, and dirt. The handles of coolers and fryers have encrusted food on them. The coolers all have old food pooled in the bottom of them. Advised to increase their cleaning frequency and deep clean kitchen.
- KDA_4_60211C - --The sifter and containers used sift raw chicken and flour has dried food debris. The PIC stated the equipment has not been used since 12/2/15. COS-cleaned
