KDA_3_30611 - --Pre-made salads on the serving line for customers have no protection from contamination above them such as a food guard (sneeze guard).
KDA_3_50116A2 - --At the salad bar, cut lettuce in a salad was 52 degrees and cut cantaloupe and honeydew melons were 54 degrees (lunch was ending at time temperatures were taken and items were discarded). Suggest using time as a public health control if these types of foods cannot be held at the proper temperatures.
KDA_4_30111 - --The salad bar is not holding potentially hazardous foods at 41 degrees or less. The unit uses re-usable blue ice type pads under the foods. The pans with foods sit above the pads. This is not working. Suggest using time as public health control or trying a proper amount of ice instead of the pads.
KDA_4_30112B - --The warewashing sink and stainless steel pan for sanitizing are too small to submerge the following wares: seven stainless steel pans, a cutting board, two baking sheets, and five stainless steel pan lids. As per the dishwasher, all of these wares are kept on site and washed at the facility. This has been cited previously either at this location or another location in town with the same owner. This issue was discussed with the manager on several occasions. Wares that are too large for the sink and pan must go back to the main kitchen for cleaning, or install a one piece 3-vat sink that is sized properly.
