There was also a plastic food grade container of chili relles at 43.8F and made on 12/02/15. There was a metal food grade container of cooked carnitas at 49.1F and made on 12/02/15. They were not able to cool down to 41F within 6 hours. COS-discarded all of the items. The ambient air temperature of the unit was reading 43.5F towards the top and 46.0F towards the bottom of the unit. The cook adjusted the temperature gauge and now the unit is reading 37.0F.
KDA_3_50116A2 - --In the make table there was a metal food grade container of shredded lettuce at 47.2F and a metal food grade container of shredded cheese at 44.1F. The lid to the make table was left open during lunch rush. In the reach in cooler below the make table there was a plastic container of raw pork chorizo at 53.9F and a plastic food grade container of taco beef at 49.5F. The door to the reach in cooler was not shutting properly because it was getting caught on the edge of a metal table and the door was opened and closed due to the lunch rush. The ambient air temperature of the unit was reading 43.5F towards the top and 46.0F towards the bottom of the unit. COS-adjusted the temperature gauge and now the unit is reading 37.0F (Note: the food has been in the unit less than 4 hours). In the Haier refrigerator there was an open gallon of milk at 45.9F and 4 tubs of sour cream at 44.4F, 47.2F, 46.1F and 46.9F. The temperature gauge in the unit was adjusted when the food was put away yesterday (in the unit longer than 4 hours). COS-discarded all of the PHF in the unit. The temperature gauge was adjusted and the ambient air temperature of the unit is reading 39.9F. In the cooler next to the grill there was a plastic container with individually wrapped raw chicken at 48.8F and a plastic container with individually wrapped raw beef at 48.7F. Both products were above the ice bath and in the cooler less than and hour. COS-removed excess product into another reach in cooler.

The person in charge said that was not the correct date and that it was opened on 12/02. COS-date marked the item correctly. (Note: this was the only item not date marked correctly).
