3-501.17(A) - --In the drawer under the grill there are three pizza rolls (home made) that are dated 9/19. The kitchen manager said this is when the items were prepared and frozen. They were thawed yesterday (9/28). COS - he updated the dates on this to reflect the time in the freezer.
KDA_3_10111 - --In the walk-in-cooler in the basement there is 4 packages of salmon that are vacuum sealed. The kitchen manager said these were removed from the freezer to thaw on Sunday (9/27/15). COS - these items were discarded. [Note - the salmon in the cooler in the kitchen was opened. The manager said that they have worked with the staff to have this done, but someone slipped up when they set it out on Sunday.]
KDA_3_50118A1 - --In the cooler under the make table there is a container of homemade cole slaw that is dated 9/22 - 9/28. A kitchen employee verified this was the correct date. COS - he discarded the slaw.
KDA_3_50118A2 - --In the walk-in-cooler there is a container of beef stock that was prepared on site. The kitchen manager said this was prepared Saturday (9/26). COS - he dated this container. In the make table in the kitchen there is an open container of cottage cheese with no date on the container. A kitchen employee said the cottage cheese was opened on Saturday (9/26). COS - he dated the container. In the make table in the kitchen there are two halves of baked potatoes that are not dated. A kitchen employee said these were cooked on Saturday (9/26). COS - he dated the baked potatoes.
KDA_3_50118A3 - --In the make table in the kitchen there is a container of home made wing sauce that is dated 9/20 - 9/26. A kitchen employee said he is sure this date is wrong because he put fresh wing sauce in the cooler this past weekend. Upon checking the date on the master container in the walk-in-cooler, the sauce should be dated 9/24 - 9/30. COS - the date was corrected.
KDA_4_20211A2 - --There is a single lid to a food container on a shelf above the stair case in the kitchen that is chipped and broken.
KDA_4_60111A - --In the kitchen there were three clean utensils sitting on top of the steam table. Two flies in the kitchen landed on the lids to the food containers in the steam table, and one of the flies landed on a utensil/scoop. COS - this scoop was moved to ware washing to be cleaned.
KDA_6_20215D - --The back door to the establishment was standing open upon beginning the inspection. There is no screen or covering to prevent the entry of flies and pests. COS - the door was closed during the inspection.
KDA_6_501111A - --Approximately five flies were in the kitchen during the inspection. One landed on the cutting board at the make table. Another landed on a clean utensil that was at the steam table and to be used as a scoop for the food inside the steam table.
KDA_Defacto - --Paper towels are kept on counter opposite of the hand sink. Made recommendation on having paper towels at the sink so that hands can be dried and then the water shut off with paper towels.
