Employee stated the chicken was prepared yesterday 10/12 at approximately 10AM and the hot dog packages were opened Sunday 10/11. COS- employee correctly date marked. There were two opened packages of sliced turkey in the walk in cooler without any date marking. Employee stated the turkey was opened yesterday 10/12 at approximately 10AM. COS- employee correctly date marked. KDA_4_60111C - --There is dust build up on the fan guards in the walk in cooler. There is dust build up on the vents of the soft serve units at the front counter. KDA_4_90311A - --There were several single service trays stored directly on the ground in the back storage area. KDA_5_50117 - --There is no covered trash receptacle in the women's public restroom. KDA_6_50116 - --There was a mop with a handle stored in the mop bucket not allowed to properly air dry. KDA_7_20111B - --There was a container of QT sanitizer for wiping cloths on the back storage shelf directly above several boxes of single service gloves. COS- PIC rearranged the shelves so that the chemicals were on a lower shelf. KDA_Defacto - --chicken tenders 135 (hot lamp) hamburger 159 (hot hold unit) gravy 155 (hot dispenser) --hamburger 179F (grill) --sliced tomatoes 38 (make table) hot dogs 37 (reach in cooler of make table) sliced turkey 40 (walk in cooler) milk 39.5 (reach in cooler front counter) --The QT solution in the 3 vat sink measured at a concentration greater than 400ppm. Per the manufacturer label the proper cleaning concentration should be between 200 and 400ppm. Employee remixed, no dishes were being cleaned at time of inspection.
