KDA_3_50116A2 - --open bag of lettuce stored in top portion of the single left make table with the with lid open during busy time of lunch hour allowing the lettuce to reach 51. Corrected with education and placed in lower section to shock back down where it is 37. KDA_3_50118A2 - --open 4 quart plastic container of previously cooked corn with no date mark and owner/cook said it was prior Wednesday that it was cooked up. Discarded being greater than 7 days. KDA_4_204112B - --No ambient air temperature device in the three door make table. Corn tested at 39. Owner will get one for the unit. KDA_4_60111A - --Within the ice maker is a small top water trap with mold build up. Owner cleaned this on site. KDA_5_20513 - --In-line water filter to the ice maker is not dated with most recent change or service. The owner thinks it was within the last year but has no records. She said she will get one in next day or two. KDA_5_50115A - --Two exerior dumpsters with no lids. KDA_7_10211 - --wipe rag sanitizer bucket not labeled. Marked KDA_7_20411 - --wipe rag bucket with sanitizer at greater than 400 part per million with bleach water. Corrected by dilution of water. KDA_Defacto - --Commercially processed pre-cooked chicken strips take from deep fat fryer at 198. --hot water at hand sink 123 ok --Other Cold Hold units: three door make table at 39, single unit make table dice tomatoes at 37, two-door [MaxCold] RIC north end of bar with milk at 39. two chest freezers with foods solid located near the north exit door.
