4-302.14 - --The quaternary ammonia test strips at the 3 vat sink are expired as of 12/30/12. There is another roll that appears to have been dropped in water at some point, as all the test strips are discolored. Let the kitchen manager know that these both need to be replaced.
KDA_3_30212 - --In the meat cooking area there are two rolling tubs next to the sugar tub. These rolling tubs are unlabeled, but were identified as containing wheat flour and regular flour. In the dry storage room there was an unlabeled bottle with a yellow liquid inside that was identified as being butter flavored oil.
KDA_4_50111A - --The left door of the Hobart Cooler in the salad prep area does not close all the way. It hangs approximately 1/4 to 1/2 inch open after being pushed closed. When the right door is opened and closed, it will hang slightly further open. Expressing concerns to the kitchen manager over this cooler not sealing shut to keep the temperature inside. They do tie the doors shut when they close for the day, but the doors are untied, and the left door hanging slightly open, approximately 8 hours out of the day. The shelves in the Hobart cooler in the salad prep area are beginning to rust.
KDA_4_60111C - --The fan by the metro hot case has a slight buildup of dust on the back of the fan cover. The fan covers in the walk-in-cooler, as well as the ceiling in front of these fans, have a buildup of dust and grime on them.
KDA_4_90311B - --In the meat cooking area there are stainless steel bowls and pans being stored neither covered nor inverted.

KDA_7_20111B - --In the meat cooking area there is a red bucket with sanitizer inside. This bucket is sitting on top of a container that has foil sheets for wrapping food inside. Corrected on Site (COS) - the bucket was moved upon request. It was set inside of the sink in this area.

Staff said these had been prepared this morning for today's lunch.
