Observation: Sanitizer test strips are needed for testing proper concentrations of sanitizer solution at the warewash sink and in sanitizer buckets.
- Ventilation hood system and filters designed to be cleanable, prevent dripping, and are adequate to prevent grease or condensation from collecting on walls and ceilings
Observation: as discussed, the exhaust hood above the griddle must pass the local fire code that requires a Type I Hood System with Fire Suppressant.
- Light bulbs, protective shielding
Observation: shatter-proof light bulbs are required above all food prep areas including the griddle.
- Mobile water tank
enclosed, sloped to drain, provided with inspection and cleaning port, "V" thread limitations, inlet and outlet sloped to drain
- Sewage disposal system approved
Observation: at the time of this pre-opening inspection, the operator was informed that the grey-water could not be transferred into the family store in buckets and disposed of into a mop drain. The grey-water must be properly disposed of byway of connection into an approved sanitary sewer.
