Observation: Both large Hobart mixers have lubrication oil dripping onto the plastic and possibly into food during prep. Unused equipment should be removed from premises.

Observation: back screen door was ajar today with a large gap visible to the outside. This is a vehicle for rodents and insects to enter. Doors should be tight fitting at all times.

Observation: back door needs to have the bottom skirted to keep pests out. This needs to be done within 30 days

Observation: shred lettuce was room temp on counter 68deg. Cut lettuce and tomatoes should be kept under refrigeration until needed. Moved to cooler until needed.
