  • Manual and mechanical warewashing equipment, chemical sanitation - temp, pH, concentration, and hardness
    Observation:There was no detectable level of sanitizer in dishwashing machine - after priming pump and running through 3 cycles, sanitizer finally pumped through the line. Employee states that the machine is generally run through 3-4 cycles before the sanitizer is checked with test papers. Corrected on site.
  • Test kit provided and used to measure sanitizing solution concentration
    Observation:Chlorine test kit in use had discolored papers and was no longer able to accurately monitor sanitizer concentration - new test papers were available, discolored papers were discarded, corrected on site.
  • Non-food contact surfaces and food contact surfaces of cooking equipment and pans are clean
    Observation:Observed hoses used to clean the steam kettle had the ends in the garbage can in contact with the side of the can. Ends were cleaned and sanitized, corrected on site.

    There was no detectable level of sanitizer in third sink - solution was mixed with hot water. Sink refilled and solution mixed with warm water, concentration was at 200 ppm. Corrected.
