Observation: Dry storage walk in racks and the walk in cooler floor are both soiled and must be cleaned.

Observation: Fans in the dish room and the vent covers in the walk in coolers are both dusty. Must keep clean to prevent buildup of bacteria.

Observation: True Aquafina cooler in dining area does not have a thermometer inside. All coolers that hold TCS (time/temp control for safety) must have a thermometer inside.

Observation: Hand washing sign was not posted at the hand sink by the ovens. Must have a hand washing sign posted at all hand sinks used by food service employees.
- PHF/TCS foods maintained at 41°F or below, except during preparation, cooling, cooling, or when time is used as a public health control
Observation: Traulsen 3 door reach in cooler in the kitchen was temped at 47* minimum and reached 57*F. Cooler temp was logged @ 6am (39*F), and unit was used frequently this morning. Food was removed from the cooler during inspection and was temped @ 45-47*F. Unit must be able to maintain food @ 41*F. The cooler appears to be functioning improperly and may not be used until it can maintain 41*F or less.

Inside of reach-in cooler next by food preparation sink was temped at 48.8*F. Need to call service.Removed foods to walk-in cooler. May not use cooler until approval has been given through health department.

In the employee restroom, the vent fan appears to be non-fuctioning. Mechanical ventilation shall be necessary to keep rooms free of excessive heat, steam, condensation, vapors, obnoxious odors and funes. Repair.
