Observation: No lights installed in hood. Lighting must be adequate for cleaning. Install light bulbs.
- Equipment location, installation, repair, and adjustment
Observation: 1) Under side of counters in RR are not sealed. All surfaces exposed to cleaning must be smooth, sealed and easily cleanable. Seal with varnish or 2 coats of light colored paint. 2) Line meat shelves with meat liners and change weekly or as needed. All surfaces exposed to food must be smooth, nonabsorbent, and easily cleanable. Meat liners are absorbent.
