Observation:Observed pico de gallo and tomatoes with preparation date of 1/21 in pizza prep cooler, discarded, corrected on site. Repeat violation.

Observation:Observed tator tot casserole mix from lunch cooling in deep, covered plastic container in kitchen refrigerator - temperature was 82 degrees. Ground beef in walk-in cooler was cooling in deep, covered plastic container, meat was 49 degrees. Transferred to metal pan, corrected on site.

Observation:Observed cut onions at 44 degrees on top of small prep cooler, air temperature in the bottom of the cooler was 48 degrees. Sliced cheeses, tomatoes, lettuce and slaw were placed in a pan of ice, cut chicken was transferred to the walk-in cooler. Owner said a replacement cooler is going to be delivered next week as the existing cooler is not able to be repaired. Corrected on site. Repeat violation

Observation:The only sanitizer test papers available were for quat sanitizer, however, chlorine sanitizer is in use.

Observation:Observed home-canned pickles in kitchen refrigerator and soup prepared at home in walk-in cooler. Removed, corrected on site.

Observation:Observed foods on top of small prep cooler were 44 degrees, foods in bottom of cooler were at 47 degrees - discarded cut tomatoes, raw chicken, cut lettuce and cheese slices. Owner turned the thermostat down and has called for service check of unit.
