  • Eating, drinking, or using tobacco
    Observation: Observed employee beverage containers in kitchen area that were not covered. All employee beverages must be covered when in food service locations.
  • Storage of clean linens, single-service, and single use articles
    Observation: Observed boxes of plastic cups stored on the floor in the kitchen dry storage area. Must store all food/food items at least 6 inches off the floor to prevent contamination.
  • Handwashing signage
    Observation: Hand washing sign was not posted at the hand sink by the ice machine. Must post a hand washing sign at all hand sinks used by food service employees.
  • Food employees hair is effectively restrained
    Observation: Observed employee not wearing a beard restraint while preparing food. All employees must wear effective hair restraints to prevent contamination.
  • Non-food contact surfaces and food contact surfaces of cooking equipment and pans are clean
    Observation: Cup and lid dispensers in retail area have become soiled and must be cleaned.
  • Food is properly labeled
    Observation: Baked goods are not properly labeled. Baked goods must be labeled individually or have a binder/booklet containing all products sold with included ingredients, and have a sign stating the location of the binder/booklet. Either method must contain the following info at a minimum: common name of the product, list of ingredients in descending order by weight, net contents, name and place of business, and list of common allergens contained.

    Observation: The following areas have become soiled and must be cleaned: inside of F'Real machines, pop nozzles, and cappuccino dispensers.

  • Sanitization of food contact surfaces - before use and after cleaning
    QA sanitizer in the bucket was too weak. The concentration of QA sanitizer must be maintained between 200-400ppm. Replace new sanitizer more frequently. Corrected at time of inspection.
  • Using a handwashing sink- operation and maintenance
  • Date marking for ready to eat, PHF/TCS food prepared on-site or opened commercial container held for more than 24 hours
    Over all have good date marking. A box of corndogs in reach-in cooler was not date marked. Must date mark all potentially hazardous food if not used within 24hrs after opened or preparation. Have 7 days from date marked to use or discard.
  • Outer openings are protected
    The door on donut case has a large gap and can't close properly. Must replace a new gasket to prevent entry pest.
  • Food is properly labeled
    Must provide an ingredients label for all self-serve donuts. Can post labels in donuts case or keep a booklet near register and post a sign in donuts case stating "ask emplyee for ingredients."
