    Observation: There is no waste water holding tank.

    Observation: There was a tub of cod sitting in water thawing and a container of soup sitting in water. Corrected on site by moving into the cooler.
  • Certified Food Protection Manager with management and supervisory responsibility employed by the establishment
    Observation: There is no one on staff that has a Certified Food Protection Management certificate. Required by 10/2014.
  • Equipment location, installation, repair, and adjustment
    Observation: The warewash machine had quit working during the inspection. Repair person was called immediately. Until the warewash machine is repaired all ware must be washed, rinsed, sanitized, and air dried.

  • Mechanical warewashing machine temperature measuring devices, heaters and baskets, and automatic dispensers, and alarms
    Observation: Sanitizer was not registering in the mechanical ware wash. Owner has gotten the sanitizer to register temporarily, but did call his repair man to have him come repair.
  • Frozen PHF/TCS foods are properly slacked and thawed
    Observation: Thawing chicken breasts on the counter. Corrected on site.
  • Protecting food from environmental contamination
    Observation: Raw chicken soaking in brine in one of the compartments of the three compartment ware wash sink.
  • Disclosure of menu items offered or served raw or undercooked
    Observation: Many items on menu listed as consumer advisory items and they do not need to be.
  • Raw animal foods separated from each other during storage, separation, holding, and display
    Observation: Raw chicken stored over the raw beef in the walk in cooler. Raw shell eggs stored over ready to eat foods. Corrected on site.
