Observation:The handsink for front counter was blocked by bread rack, must keep open for usage at all times, bread rack moved a short distance away to keep from risk of splashing the bread.

Observation:Large wiping bucket of sanitizer is not labeled as to contents, label with common name.
- Sanitization methods - hot water, chemical
Observation:Had chlorine sanitizer in excess of 200 ppm in three compartment sink, diluted to 100 ppm now. Use test strips to verify concentration.

Observation:Has bulk bin of sugar, must label with common name to prevent confusion.
- Cleaning of cooking and baking equipment
Observation:Has bread pans for wheat breads that are not washed daily, must wash daily any baking pans.

Observation:1)Has blue ice scoop on top of ice machine, must store on shallow tray or in bucket to protect from contamination. 2)Has ice scoop touching ice in bin at driveup window, must keep handle inverted out of ice.

Observation:1)Floor drains in RR and kitchen need to be leveled and grouted to aid cleaning and reduce trip hazard. 2)Culinary floor sink edge needs regrouted in one area along the rim. 3)One small gap in grout in front of ice machine, regrout. 4) Cover open socket, if not needed, behind the prep table nearest phones. 5) Seal the base of the mop sink to the floor to aid cleaning.

Observation:Has scented bleach on site for general cleaning, must use regular bleach, not a scented version, for use as sanitizer.
