Observation:Wiping bucket of sanitizer too strong, at 200 ppm, diluted to 100 ppm now.
- Frozen PHF/TCS foods are properly slacked and thawed
Observation:Using hot hold unit for thawing cooked ground meat, must use a more steady heat source such as the oven, stovetop, or microwave to thaw properly. Hot holds are not intended for cooking, just holding foods hot once correct cooking or reheating temp reached.
- PHF/TCS food that is cooked and cooled on premises is reheated within 2 hours to 165°F or above for 15 seconds for hot holding

- Multiuse food contact surfaces are constructed of safe materials
Has glassware inverted on cloth toweling, must porvide a smooth, cleanable, nonabsorbent surface, separate with webbing to protect the food contact surfaces from cloth.
- Sanitizers
Mixed new bleach for sanitizing and was too strong, 200 ppm, must dilute to at least 50-100 ppm, usually 1/4 tsp per quart, or 1 tsp per gallon. Corrected on site.

Need to wash hands before putting on gloves and when remove them, corrected on site with education.

Two working containers of cinnamon sugar not labeled with common name, label now to identify contents.
- Sanitization of food contact surfaces - before use and after cleaning
Dishmachine chemical getting low registering 10 ppm, changed to new gallon and now registering at 100 ppm. Recommend logging test strip reading daily with temp reading to ensure is properly sanitizing. Corrected on site.
