- Multiuse food contact surfaces are cleanable
Several pair of tongs were observed with broken or cracked handles. All food contact surfaces must be clean to sight or touch and easily cleanable. Repair or replace all tongs with broken handles.
- Drying mops
Observation:Mop was balled up in empty mop bucket. All mops must be hung to air dry when not in use.
- Physical facilities maintained in good repair
Observation: Cove base broken and missing by grease trap. All floors ceilings and wall shall be easily cleanable and non absorbent.Repair or replace cove base.
- Storage or display of food in contact with water or ice
Observation:Ice on food in walk in freezer. Move foods from under fans and repair freezer so condensation don't build up.
- Equipment location, installation, repair, and adjustment
Observation: Reach in Beverage air cooler at drive through window door is not closing properly. 2)Cooler on prep line needs new gasket. 3)Door on walk in cooler does not close or seal properly. Repair all equipment to maintain in proper working order.
- Posting inspection reports
Observation:Most current inspection was not posted. Each store must post most current inspection in a place when the public has access to read.
- Manual and mechanical warewashing equipment, chemical sanitation - temp, pH, concentration, and hardness
Observation: Sanitizer not mixing correctly so concentration too low. Recommend hand mixing so dishes could be done till repair of mixing valve is repaired.
- Written procedures prepared in advance and made available to the regulatory authority that specify methods of compliance
Observation: Written procedure not able to be produced at time of inspection. Some procedures being practiced not conducive to using time as a control. Restock with new pans every four hours. No putting new food on top of existing food and restarting time.

- Light bulbs, protective shielding
Observation: In the walk in freezer the light shield is cracked and in poor condition. All lights exposed to food and food items shall be shielded or shatter proof. Repair as needed. REPEAT VIOLATON.

Observation: The microwave had dried food on the ceiling of the unit. Clean as often as necessary to keep.
- Test kit provided and used to measure sanitizing solution concentration
Observation: 1) The Quat sanitizer has a range of 150-400 ppm. The test strips do not reach 500 ppm.2) The dish machine does not have chlorine test strips. Shall provide both type of test strips.
- Drying mops
Observation: One mop was observed being stored in mop water. After use, mops shall be placed in a postion that allows them to air-dry without soiling walls, equipment, or supplies. CORRRECTED ON SITE.
- Equipment location, installation, repair, and adjustment
Observation: The walk in cooler's handle is very loose and in poor condition. The walk in freezer does not have a handle and is difficult to open the door to walk into the freezer. REPAIR BOTH AS NEEDED.
- Mechanical warewashing machine pressure measuring devices, data plate, internal baffles, and flow pressure device
Observation: The dish machine does not have a data plate. A warewashing machine shall be provided with an easily accessible and readable data plate. contact dish machine service and request a new data plate for machine. REPEAT VIOLATION.
