Manual and mechanical warewashing equipment, chemical sanitation - temp, pH, concentration, and hardness Observation: Sanitizer pump was not dispensing sanitizer in sanitizer buckets. Person in charge manually added sanitizer to sanitizer containers with wiping cloths. Person in charge stated they will contact service provider to service pump and will manually add sanitizer to the three compartment sink and buckets until pump is working correctly.
Physical facilities maintained in good repair Observation: caulking at three-compartment and hand sink had become worn. Hole located on lower wall across from the mop sink and was missing a baseboard.

Cooked PHF/TCS food cooled from 135°F to 70°F within 2 hours and from 135°F to 41°F or below in 6 hours Observed several sauces holding at 63 degrees after cooling overnight. Voluntary discarded products.
