Observation:The digital food thermometers either were no longer working or needed new batteries.

Observation:Observed heavy dust and grease buildup on the filters in the hood above the fryers.

Observation:The only sanitizer test papers available are for chlorine sanitizer, there are no quaternary ammonium (quat) test papers available for the quat sanitizer dispensed at the three-compartment sink.
- Cleaning frequency of food contact surfaces (PHF/TCS)
Observation:The chicken breading container in the walk-in cooler had heavy flour deposits on the lid and outside of container - the owner said it is cleaned less frequently than 24 hours. Corrected on site.
- Equipment location, installation, repair, and adjustment
Observation:Observed covers to the freezer case by the walk-in cooler do not fit tightly - the covers are deteriorating and the seals are falling off.
- Handwashing signage
Observation:There are no handwashing signs in restrooms, printed, corrected on site.
- Cold and hot holding equipment used for PHF/TCS foods are equipped with at least one temperature measuring device that measures temperature in the coldest part of a hot holding unit or the warmest part of a cold holding unit and located and designed to allow for easy viewing.
Observation:The walk-in cooler and glass-door cooler by the walk-in cooler did not have refrigerator thermometers.
