    Observation: Food storage containers on the counter needs labeling to be identified with common name of food. This is a repeat violation.

    Observation: Light covers are damaged and cracked in back storage area next to back exit door.This is a repeat violation.

    Observation: Several cracked tiles and damaged next to dish washing machine area.This is a repeat violation.

  • Plumbing system maintained in good repair
    Observation: There is a slight leak under ice tea container in consumer area cupboards. All plumbing must be in food repair. Manager showed us the the ordered parts on- line. He will send us the invoice when is fixed or we will follow physical recheck.
  • Food storage containers identified with common name of food
    Observation: Overall labeling is very good. However,the following food items are not labeled: 1) Salsa caramel, 2) Melt powder on the food counter, 3) Cookie donuts in cooler under the same counter, 4) Liquid (water) container with red lid in walk-in cooler. Food taken from original packaging shall be identified with the common name of the food item.
  • Non-food contact surfaces and food contact surfaces of cooking equipment and pans are clean
    Observation: The following has food debris and must be cleaned: 1) Roasted Owen on food prep table, 2) Kitchen coolers in the kitchen.Clean as often as necessary keep clean.

    Observation: Wet wiping cloth not kept in sanitizer between uses on counter for consumer area. Must keep wet wiping cloths in approved sanitizer in between uses. Corrected on site.

    Observation: Several plastic containers were cracked and in disrepair on shelves in back storage area. All utensils must be in good repair to avoid bacteria build up. Di scared at the time of inspection. Corrected on site.COS

    Observation: 1) Bowel being used as scoop in cookies donuts,2) Scoop handle is lying in cashew container. Must use utensil with handle stored outside of food and keep inverted to prevent contamination. Corrected at time of inspection.

    Observation: Box of green beans stored n floor in walk-in freezer. All food and food items must be stored a minimum of 6" off the floor. Provide enough shelving so items are off the floor. Corrected on site.

    Observation: Has no food thermometer to check the correct cooking temperature of meat patties. A temperature measuring device with a suitable small diameter probe that is designed to measure the temperature of thin masses shall be provided and readily accessible to accurately measure the temperature in thin foods such as meat patties and fish fillets. Provide one.
  • Air drying of equipment and utensils
    Observation: Metal and plastic containers were observed wet after being stacked on shelves in back area. Must allow fully air-dry before stalking. Removed and corrected on site.
  • Cleanability of floors, walls, and ceilings
    Observation: Several floor tiles are cracked and damaged in kitchen are next to dish-washing machine are no easily cleanable. Must replace to provide easy smooth cleanable tiles.

  • Plumbing system maintained in good repair
    Observation: The faucet for the sink next to the ice machine has a drip. Repair as needed.
  • Test kit provided and used to measure sanitizing solution concentration
    Observation: The chlorine sanitizer for the warewashing machine is NOT dispensing at least 50 ppm. The manager called for service today. Send letter of correction when the warewashing machine is dispensing 50-100 ppm of chlorine per manufacturer label.(data Plate) This food establishment also has a 3 compartment sink until the dish machine is serviced/repaired use the 3 compartment sink for wash, rinse, and sanitizing.

    Observation: The four door reach in freezer has food build up on the shelves and on the bottom of the unit. Shall clean as often as necessary to keep clean. Provide letter of correction this freezer was cleaned. --Observation: The ice machine shoot has some build up. Clean as often as necessary to keep clean. Keep a cleaning schedule to assure the ice machine and the shoot is clean at all times.
  • Sanitizers
    Observation: Has Quat series 146 which has a variable of 150-400 ppm. Not using the correct test strips. Purchase the test strips that reach 500 ppm. The current test strips available only reach 400 ppm. Provide letter of correction the proper quat test strips were purchased that reach 500 ppm for the 146 quat series.

    Every hand sink to be used by employees must have a sign posted reminding them to wash their hands. Sign given during inspection. Post at front hand sink.
  • Cleanability of floors, walls, and ceilings
    Some tiling in kitchen is cracked and no longer easily cleanable. All flooring installed must be smooth, nonabsorbent and easily cleanable. Replace as needed.
  • In-use utensils, between-use storage
    Ice cream scoop for flavor of the day is sitting in container of cold water. In use utensils must be stored on clean surface, in running water, or in water maintained at 135 degrees or higher. Suggest using provided dipper well.
  • When to wash
    Observed employee changing gloves without washing their hands. Must wash hands in between glove changes. Glove change does not replace hand washing.
