    Observation:Observed pans of salad bar foods sitting in deep pans that had a layer of ice cubes at the bottom, however, the ice did not directly contact the smaller food pans and the spinach in one pan did not have ice underneath the pan - cole slaw was 44 degrees, after approximately 45 minutes out of refrigeration. Employee added more ice to the deep pans, removed spinach to store in refrigerator until serving time. Corrected on site.
  • Equipment location, installation, repair, and adjustment
    Observation:Observed pink slime buildup on metal parts of ice machine - discussed routine cleaning of machine.
