    Failure to conduct cleaning and sanitizing operations for utensils and equipment in a manner that protects against contamination of food-contact surfaces from cleaning equipment. Specifically, sanitizer soaked sponge on a rope is used for midshift cleanup between allergen and non allergen product. Sponge and rope are not easily cleanable surfaces. Seed trays are not washed and sanitized between allergen and non-allergen.
