PHF/TCS foods maintained at 41°F or below, except during preparation, cooling, cooling, or when time is used as a public health control Observation: Lettuce and tomatoes were 45-46 degrees F. The units were labeled with a 4 hour time mark.
Established procedures for responding to vomiting and diarrheal events Observation: The PIC stated they had a written plan to clean up diarrhea and vomit but could not find the plan. I provided a noro clean up document and he stated he would copy it and place it into protocol.
The ability to describe the symptoms associated with the diseases that are transmissible through food Observation: The PIC could not state the 5 symptoms of food borne illness. I referred him to form 1-B to orientate him with the 5 symptoms of food borne illness.
