Precluding contaminants The construction of equipment and utensils fails to preclude the adulteration of food with contaminated water. Specifically, I observed two metal nuts within the interior of the ice making unit that were rusted. The metal fasteners were attached to the plastic deflection plate. There was rust covering the metal fasteners and was also present on the plastic surface of the deflection plate. Water was observed running down the surface of the plate and dripping into the ice below. Ice is used an ingredient in the manufacturing of gravy product.
Labeling Ingredient declaration on finished product label does not include a complete listing of all ingredients included in the flour. The ingredient statement does not include the presence of wheat as an allergen ingredient.
