Just saying, how exciting can one get about a bunch of cold cuts.
Smoked brisket, ok. Pastrami, smoked turkey or chicken. But cold cuts? Hard pass.
There's a pretty large variance in quality and taste of cold cuts since it's a broad category with a lot of different meats and methods. You make it sound like everyone's using knock-off Oscar Meyer bologna from the 99 cent store.

If it’s processed meat, it’s mystery meat. Unless I see the butcher make it in front of me I would not trust it.
Italian sandwiches use high quality meats but the problem with all preserved meats is they use too much salt and nitrates. It's the nitrates that causes cancer, so anyone who eats a lot of cold cuts are high risk of developing colorectal cancer.
While you don't see people who eat raw or fresh meat with that problem.
Consuming what's called the "Mediterranean diet" has many health benefits. It also includes moderate intake of what Americans call "processed" meat such as gabagool (capicola).
Americans tend to be greedy effs; sandwiches, dinner plates, whatever are piled high with food so they can stuff themselves.
Almost every area in Europe has some sort of traditional cured pork; but people eat things in moderation instead of pigging out on half a freaking ham.
