We have recently sold our home and are looking to cash out a good chunk. Some of which we are purchasing land with and the remaining to start our Barndominium Build. We are looking for need to finance around 75k to complete the building and interior finishes.
Should we get started until we require financing then seek that out or should we start the mortgage process prior to building?

You definitely want to get the financing lined up and in place BEFORE your start building. Most lenders/banks will not touch a construction project once it's in process.
Also, I would not know where to start on a Barndominium - there are a multitude of definitions, what specifically are you going for?
Major agencies or pools for financing (including portfolio, which I am) want to make certain the property conforms to secondary guidelines. Many have this idea that "portfolio" = things others won't finance. And while part of that is true, it's usually just a one-off, like having 30 acres, instead of the preferred 10, a quick look at Barndominium Google had so many characteristics that were not secondary market friendly. If it's all out nonconforming and not eligible for mortgage loan financing, you will likely do better with a signature loan, Line of Credit (secured by signature), 401K loan or some other type of financing. I would first explore if you can shed the word barndominium - could you pivot to "home + workshop/garage?" You would have way more acceptance going that route.
USDA is going to pit you with US government guidelines, aka, VA or FHA, so that won't be the way in, either. Fannie/Freddie, possibly, with a a little polish. Shed the title, try to tweak your terminology to match the financing market and start from there.
