How would a contractor know you are an immigrant, legal or otherwise? Especially in Florida: 21.8% of the households in Florida reported speaking Spanish at home as the primary language.

If you feel your home insurance was higher than it should be, that could be the result of a poor credit score. Insurance companies incorporate your credit score into the premium rating. A poor or low credit score could raise your premium.

Yes, my car insurance was ludicrous. Technically not because I was an immigrant, but because I had NO credit (because I was an immigrant) and if I recall correctly, they also treated me as an inexperienced driver because I had no prior insurance in USA

You were treated exactly the same as a citizen who had no prior history. I mentioned this in my post; insurance companies incorporate your credit score and credit history is setting rates.
