All non food contact surfaces of equipment must be clean.Observed fan guards in walk in refrigerator with visible dust debris buildup. Clean fanguards to prevent possible cross contamination from dust falling into food stored inside walk in unit.
[1] Single service: articles; storage; dispensing; used Observed paper cups stored directly on floor in back storage room. Improper storage of single service articles. Store all single service articles at least 6" off ground to avoid cross contamination.
[2] Containers or receptacles: covered; adequate number; insect/rodent proof; frequency; clean Observed bag of garbage stored in dumpster area. All garbage shall be stored in can or receptacle. Do increase size of garbage can or have garbage pickup frequency increased so that all garbage is contained in a covered receptacle to prevent vermin attraction.
General Comments that relate to this Inspection All cold holding units checked Ok and recorded below 40 F.All food properly stored. Hot oatmeal temped at 150 F.Equipment is cleaned on a routine basis.Dipper wells operational.Handsinks properly stocked with liquid soap and sanitary disposable towels.Chlorine sanitizer recorded at 100 ppm.Proper storage of icesccops and other utensils with handles extended out of food.Bathroom observed in a clean and sanitary condition.Observed good handwashing.Do repair or replace deflector plate in ice machine to prevent ice and water from leaking from ice machine. Standing water attracts vermin. Please have this repaired by 04/02/12.
