Soap bottle available at 3-compartment sink next to this hand sink; ok to use for hand washing in the mean time. Keep both hand sinks stocked with soap and paper towels at all times.

    Ambient temperaure of countertop sandwich refrigerator at 46 F. Ice build up noted inside refrigerator. All food products to be transferred to walk-in cooler at this time. Do not stock any foods in this unit until serviced to maintain ambient temperature at below 40 F. Monitor thermometer and keep thermometer hanging and not in contact with surfaces of unit to ensure that unit maintains products at proper temperatures.

Walk-in 42F ambient; deli cooler 40F; ice cream freezer -28F; sausage and french toast tornado 132F; hot dog 133F; cheese smokie 139F (verified documentation of 4 hour hold time and log of time in and out on product in the hot holding unit - rollers).- Overall facility was neat; clean and well organized.- Hand washing station was stocked and operational.

    No Violations Noted at the time of inspection.OBSERVATIONS AND RECOMMENDATIONS:- Ensure that the sanitizer water in the wipe down buckets are maintained at 50-100ppm chlorine concentration.- Tested temperature of hot dogs = 105F and tornados = 115F. Manager advised product was set out on rollers at 9AM this morning. Product is marded not ready until at temperature. Log book is being kept on time of product placement; temperature and when pulled. As a reminder hot hold foods (hot dogs; tornados) at 140F or hotter. Discard after 4 hours out if temperature is not known or is between 40F-140F.
