Observed shelves storing liquor bottles that are dirty and the wood is starting to wear away. Thoroughly clean these shelves and repaint or resurface these shelves to ensure they are smooth and easily cleanable.Observed metal shelf at end of bar that is dirty and in need of a good cleaning. Thoroughly clean this shelf.

Recommend 300 ppm Quat in three compartment sink to ensure dishes are properly sanitized.Ensure towels are being changed out every 4 hours.Good ice scoop storage. Speed gun holders clean.

3 compartment sink had no sanitizer present. Upon further inspection; it was discovered that the dispenser pump was not functional. *Unit was repaired while on site and new water tested @ 200ppm quat.*

Pursuant to regulation dish/utensil washing sinks may not be used for hand washing. If the sink is needed for utensil washing the addition of a separate sink for hand washing may be required.- Tested 200ppm on the quatenary sanitizer at the 3-compartment sink.- Soap and towels were available at the hand sink.
