Sushi company must supply speed rack to properly cool the sushi after making and before putting into display case. Discussed procedure with employees and Kroger management. Sushi is to be cooled after rolled in open containers in the walk in freezer and reach 38 degrees F before placing the lid back on and placing into the display case.

The PIC should be prepared to recognize conditions that may contribute to foodborne illness. The PIC must also recognize conditions that fail to comply with Regulation requirements and be authorized to take the appropriate preventive and corrective actions to ensure that the Regulations' objectives are fulfilled.

Cooling has been an issue for the establishment. Spoke with the Kroger manager on duty and it was agreed that they will provide a speed rack for the sushi kiosk to use in the produce cooler for cooling freshly made sushi. The Kroger manager called their repair person during inspection to have the large prep unit repaired. Discussed with him that this had been a problem on previous inspections and must be repaired to hold food at proper temperature or replaced with a unit that will hold food at proper temperature. Sushi kiosk manager is responsible to advise Kroger manager any time the cooling equipment is not properly working.

Correction: The Consumer Advisory shall include a disclosure statement that includes a description of the animal-derived foods and identification of the animal-derived foods by asterisking (*) them to a footnote that states that the items are served raw or undercooked, or contain raw or undercooked ingredients.
