- In the walk in cooler 2 there was cooked/cooled marinara sauce labeled 2-21 and cooked/cooled sausage labeled 2-17. Both were discarded. Manager discussed date labeling and rotating with employee at that station. Those items were voluntarily disposed of.
- There is buildup in all of the can openers. The one closest to the office has metal shavings in and around the blade. The ice machine for drinks had buildup on the drip trays and on the side. The inside was cleaned at time of inspection. The handles and front of the reach in cooler in the salad bar/dessert area have buildup.
- The wall is damaged in the salad/dessert area. The FRP at the corner no longer has a guard on it and is bowed. The wall close to the soda fountain, in the server area that is closest to the buffet, is also damaged.

- Found plastic glass with no handle in ice bin at waitress station.
- Thermal label for hot water sant in dishwasher did not turn black. Dishwasher was switched to chemical-chlorine sant & tested 100PPM.
- Found 3 moist wiping clothes stored on kitchen counters.
- Found food/scum buildup on can opener & bracket mount and also on potato wedge cutter.
- Found lent/soil buildup on wall mounted circulating fan in desert area.
- Found clean, wet metal pans stored together still wet.

- Observed damaged walls/ paint chipping/ metal pieces damages inside raw meat reach-in cooler next to deep fryer behind buffet line. Please ensure food is protected from physical contamination at all times.
- Observed rusty/ paint chipping on metal shelves inside reach in cooler in wait staff section next to soda dispensers. Please ensure food is protected from physical contamination.
- Observed various wiping clothes stored on counter in the kitchen. Please store in sanitizer pail between uses.
- Observed dust on light fixtures and grease build up inside of vent in kitchen (meat prep) next to dish room. Please ensure food is protected from falling dust/ black build-up.

- Observed various wash rags stored on counter tops. Store wash rags on sanitizer solution between use.
- Observed dirty hand mixer stored with clean kitchen utensils. Corrected during inspection.
- Rust and paint chipping on shelving in produce cooler. Properly seal shelving.
- Observed damaged/ missing tiles along bottom part of wall. Replace to avoid collection of dirt/ food debris and allow for easy cleaning. Also observed rotting ceiling tiles in small dry storage room. Replace tiles.
