  • Observed unlabeled container on counter that was salt. All bulk foods, removed from original container, unless easily identified, must be labeled. Owner provided label during inspection.
  • Observed cooked chicken in cooler with no date label. All foods that are potentially hazardous must be labeled with 7-day date label to prevent contamination. Owner provided date label during inspection.
  • Observed uncovered cheese in glass cooler. All foods must be covered when in storage. Owner provided cover during inspection. Owner provided cover during inspection.
  • Observed employee wash hands and handle cooked crab for a cold salad with bare hands. Unless there is a written policy, employees must not handle ready-to-eat foods with bare hands.
  • Observed employee rinse utensil out in hand sink and observed large amount of food debris inside. Hand sinks must only be used for handwashing.
  • Observed employee correctly wash hands and the turned off faucet with bare hand. Employees must turn off faucet with paper towel. Provide TCHD with training documentation for handwashing by 2/18/16.
  • Observed rusting shelf holding cans and food in room with three compartment sink. Food contact surfaces must be smooth and easily cleanable. Repair or replace to allow for proper cleaning.
  • Observed leak in women's room faucet, plastic wrapped around both faucets of the 3-compartment sink, and slow draining hand sink. All plumbing must be maintained in good repair. Repair.
  • Observed men's room door opened with a broken self-closing device. All bathroom doors must be self-closing and remain closed unless cleaning. Repair self-closing device.
  • No hand soap in dispenser near cooking line. All hand sinks must be supplied with hand soap. Owner provided hand soap during inspection.
  • Observed damage to corner of wall by walk-in cooler. Repair to allow for proper cleaning.
  • Observed damage on back exit door. Repair to allow for proper cleaning.
  • Observed green chemical on shelf in kitchen, not by food or food-contact surfaces, that was unlabeled. All chemicals must be labeled to avoid misuse. Owner provided labeled during inspection.

  • Observed uncovered lettuce and cooked vegetables in walk in cooler. Ensure all foods are fully covered while being stored. Manager covered food on site.
  • Observed heavy food and grease buildup on front and sides of stove top. Routinely wash, rinse, and sanitize these surfaces to prevent buildup. Also observed foil being used to cover sides of stove. Remove foil and wash, rinse, and sanitize surface underneath.
  • Observed debris buildup on metal shelves with cans and on shelves in smaller dry storage room. Routinely wash, rinse, and sanitize these surfaces to prevent buildup. Also observed food buildup on front, in the insides, and along gaskets of cookline coolers. Ensure routine cleaning of these surfaces.
  • Observed leaking 3-compartment sink. Contact plumber and repair faucet.
  • Observed wire sponge sitting in kitchen handsink. Ensure handsinks remain clear and are easily accessible for all employees. Sponge was removed at the end of inspection.
  • Observed missing floor tiles near kitchen's back exit door. Install floor tiles. Also observed cardboard being used as floor mat in walk in freezer. Per manager, it provides slip resistance to the employees and is replaced daily. Explained to manager how cardboard cannot be used as a medium since it is absorbent and not easily cleanable. Instructed manager to use rubber slip resistant mats that are commercial approved.
  • Observed heavy debris and grease buildup on walls around stove top. Routinely clean walls. Also observed soiled ceiling tiles throughout the facility. Routinely clean ceiling tiles or replace ceiling tiles.
  • Observed peeling paint and damaged walls near sugar bins in dry storage room. Repaint or re-surface damaged walls. Also observed damaged walls and coving around walk in freezer door. Repair damaged walls.
  • Observed unlabeled spray bottle in utility and chemical storage room. Manager labeled bottle on site as de-greaser. Ensure all spray bottles are correctly labeled.

  • Observed chicken stored over beef in walk in cooler. Explained final cooking temperatures of chicken versus beef to owner. Suggested dedicating one rack to pork and beef and another rack to chicken. Employee moved chicken at time of inspection.
  • Observed fly strips in the prep area near the walk in freezer. Only observed 2 flies in entire restaurant. Explained contamination if fly carcass were to fall into food. Do not hang fly strips in prep areas. Suggested right near the back door. Owner had employee move strips away from prep areas.
  • Observed cook touching food with bare hands before putting food into wok for further cooking. I asked owner if they had a bare hand policy. She said they did not. I explained that a bare hand policy would have to be specific to their facility in step by step order of how bare hand contact would benefit cooking operations. Always use utensils or gloves when prepping and cooking food.
  • The cutting board in the wok area has deep cuts. Discussed either flipping the cutting board and wash/rinse/sanitizing it or refer to the owner's manual for how to refinish surface to make it smooth again.
  • Observed white build up on ice machine drip tray. Wash, rinse, and sanitize on a routine basis.
  • All non-food contact surfaces need to be washed, rinsed, and sanitized on a routine basis. These surfaces include but are not limited to handles, seals, racks, the outside of the dish machine, and the metal plate between the hand sink and the prep area in the wok cooking area.
  • Found build-up of debris on floors. Clean the floors.
  • Observed parts of interiors walls near the walk ins are crumbling. Repair walls. There is a gap around the pipes coming out of the water heater and up into the ceiling. Seal around pipes. The tiles in the bathroom behind the stools are coming away from the wall. Reseal to the wall.
  • Observed gap between sinks and the walls in bathrooms and in kitchen area. Seal all gaps.
  • Found build up on ceilings and walls especially near equipment. Clean the ceilings and walls.

  • There are cracked wall tiles in the women's bathroom. Repair or replace tiles.
  • Observed a lot of grease build up on the ceiling tiles and grid. Clean the ceilings.

  • SEVERAL CONTAINERS OF FOOD IN WALKIN COOLER WERE NOT COVERED.
  • DUCK TAPE WAS USED TO COVER WALL OUTLET IN KITCHEN.
  • NO CHLOR SANT PPM IN NEITHER WIPING PAIL OR IN DISHWASHER. CHLORINE WAS ADDED TO WIPING PAIL. CHLORINE SUPPLY HOSE WAS RECONNECTED TO DISH WASHER & IT TESTED 100 PPM.
  • FOUND EXCESSIVE GREASE/SCUM BUILDUP ON OVERHEAD GRILL FILTERS.
