Observed an individual portion cup being used as a scoop in the feta cheese in the top of the prep cooler. Provide a scoop with a handle .
Employee was observed touching their cell phone and going right back to preparing food and doing cleaning tasks (sweeping, wiping tables, picking up dirty dishes) and not washing their hands before handling food. Discussed when, how, and why to wash hands with employee/owner (only staff at time of inspection). Verified proper hand washing after training employee/owner.

Chlorine wiping pails had 0 ppm chlorine. Maintain at 100-200 ppm. Inspector trained employee on setting up sanitizer and set up the buckets at 100 ppm.

Observed falafel in the kitchen cooler that was not labeled. Per the manager, the preparation for the item was not complete. Label. Observed corned beef and kitchen in the prep cooler that was not labeled. Label.
Observed chili that was being hot held at 107 F at ~3:30 PM. Per the manager, the chili had been hot held since 10:30 AM. The chili must be hot held at a minimum temperature of 135 F. The chili was voluntarily removed to the managers vehicle to take home at the time of this inspection.

Observed a box of apples in the cooler that were rotting. Per the manager these apples belong to him. There is nothing on the menu that includes apples. Observed fork that was stored submersed in a container of pickle relish. Dispensing utensils must be stored with the handle extended out of the food.

Observed paint stored next to food items on the dry storage shelf. Chemicals must be stored physically separate from food. The paint was removed at the time of this inspection.
Facility has not been keeping any temperature documentation or cool down documentation since the last inspection. This documentation is required per the facility category. Submit 30 days of cool down and temperature documentation to this department by 12/20/20.
