  • Found unlabeled cooked home fries on a shelf next to the grill. Hot foods must be held at 41F or higher. Corrected--they were discarded by manager.
  • Found unlabeled cooked baked potatoes in the walk-in cooler. Cooked and cooled food must be labeled with the date and time of onset of cool down and recorded on temperature charts. They were not recorded on the cool down chart. Corrected--they were discarded by manager.
  • Replace or repaint rusty shelves in the reach in cooler and dry storage areas so they are smooth, durable, non-absorbent and easily cleanable.
  • The grill, stove, fryer, and microwave had a build up of debris. Clean and sanitize these areas.
  • The kitchen and walk in cooler shelves had a build up of debris. Clean and sanitize them.
  • Found build-up of debris on floors under and around equipment and in the walk in cooler. Clean the floors.
  • Repair hole in the wall under the 3-compartment sink and repair /replace/repaint damaged and peeling walls in the kitchen as discussed. Replace peeling caulk around the kitchen hand sink.
  • Replace broken light shield in the kitchen cook line.
  • Observed and unlabeled green chemical in a spray bottle under the waitstaff hand sink. Label to avoid miss use. Corrected--it was discarded.

  • Observed two gallon milk jugs used to dispense milk for immediate service.
  • Observed bulk food item not labeled. Manager labeled it as flour during the inspection.
  • Observed Egg Salad not labeled. It was voluntarily discarded by manager during the inspection. Ensure ready to eat potentially hazardous foods are labeled.
  • Observed the following items in the kitchen double door cooler that were not at or below 41 F; Egg wash at 56 F, Sliced tomatoes at 51.1 F and 47 F, Sliced ham at 47.5 F, Diced ham at 49.6 F, Bulk sausage at 47.7 F, French toast batter at 49.5 F, 4 hot dogs at 50.7 F, Boiled eggs at 48.7 F, Egg beaters at 56.3 F, 2 catfish fillets at 48.2 F, Chicken at 45.5 F and 50 F, 3 Steaks at 49 F, 5 flats of eggs at 53.6 F & 61 F & 48.6 F & 47.3 F & 49.5 F. These items were voluntarily discarded at the time of this inspection. Contact TCHD before this cooler may be put into use.
  • Thermometer calibration showed a metal stem thermometer five degrees off. Thermometer was voluntarily thrown away by manager after stating there have been issues with that thermometer.
  • Observed un lidded personal staff beverage near the three compartment sink and in the bar area. They were both discarded. Ensure all personal beverages are enclosed.
  • Observed duct tape being used on a chest freezer in walk in cooler. Duct tape is not easily cleanable, remove. Observed handle missing from a chest freezer in the walk in cooler. Replace. The following coolers had broken/debris build up on the seals: chest freezer in second walk in cooler, prep station cooler, and standing stainless steel cooler.
  • Observed debris build up on the wire rack above the hot holding units in the kitchen. Microwave near grill has debris build up. Wash, rinse, and sanitize these surfaces.
  • Observed light bulb in the walk in cooler without a shield. Provide shield.

  • Observed chili that was labeled 4/22/15. Per the cook, it was put in the freezer on that date and then removed. I explained to the staff that it must be labeled with the date when it is taken from the freezer and used/discarded within 7 total days after preparation (excluding the time frozen).
  • Observed milk and chocolate milk being served to customers out of original gallons.
  • Observed debris accumulation on the following items/surfaces: Microwave (inside and outside), Shelving where microwave sits, All cooling units in facility, Carts in kitchen. Wash, rinse, and sanitize these items/surfaces and ensure routine cleaning.
  • Observed cups stacked together that were wet. Ensure all cups, dishes, and utensils are air dried.
  • Observed bowls and containers on shelving that was not inverted. Store inverted.
  • Observed debris accumulation on floors throughout kitchen. Clean daily.
  • Observed debris accumulation on walls throughout kitchen. Walls must be cleaned daily.
