  • Observed uncovered ham and gravy in walk-in refrigerator and uncovered items in the standing freezer. All foods must be covered when not in use to prevent contamination.
  • Observed the following food contact surfaces in need of repair: shelving in walk-in cooler and freezer beginning to rust, white wood shelving in walk-in refrigerator is damaged, and damaged counter tops near back sink, near grill. Repair or replace to allow for proper cleaning.
  • Observed the following non-food contact surfaces in need of repair: top and sides of coffin freezer has chipped paint and is rusting, coffin freezer handles are broken, shelf near coffin freezer is broken and using saran wrap as method of repair, and paint beginning to peel off shelf by kitchen hand sink.
  • Observed employee make sanitizer bucket in hand sink in wait staff area and observed food debris in screens in hand sinks. Hand sinks must be accessible at all times and only used for hand washing.
  • Observed broken floors tiles on floor by dessert display and damaged floor of the walk-in cooler. Floors must be maintained in good repair. Repair to ensure proper cleaning.
  • Observed the following walls/ceilings in need of repair: damaged wall seam near window in three compartment sink room, damaged floor to wall juncture with a 3 inch gap, paint chipping off wall near walk-in cooler, damaged wall in dry storage, and duct tape used to fix the ventilation systems above kitchen handsink. Walls, ceilings, and attached equipment must be maintained in good repair and repaired with approved materials to ensure proper cleaning. Repair.
  • Observed broken cooler used as storage with dirty door seals and damaged inside. If cooler is not to be used, then the cooler must be removed as only equipment necessary to the operation of the facility is permitted to be in food preparation areas.

  • Observed rusty shelves in walk in freezer. Also observed damaged counter top in food prep area and in the corner of the counter top near stove top oven. Repair or replace counters so they can be smooth, durable, non-absorbent, and easily cleanable.
  • Observed foil surrounding the walk in freezer condenser pipe. Remove the foil and repair pipes to be easily cleanable. Also observed plastic wrap lining the wall near the pots and pans storage area. Poor gasket seal on small Kenmore cooler. Repair gasket.
  • Chlorine sanitizer in wiping buckets were 25ppm. In buckets, maintain chlorine sanitizer around 50-100ppm. Corrected on site by employee.
  • Observed peeling paint on door panels near 3-compartment sink and on door panels in walk-in cooler. Sand and repaint surfaces around the door, so they can be smooth, durable, and easily cleanable. Also observed holes in ceiling in walk in cooler and holes along wall outside the walk in cooler where pipes are going through walls. Fill or repair holes. Observed debris buildup around pipes and outlets above food prep counter. Routinely clean walls in this area.

  • Found dents on the seam of 4 cans of food on shelves. Cans that are dented on seams must be used the day of damage or discarded. All cans received with dents must be returned or discarded.
  • Prep cooler in kitchen had temperature range of 45F-50F. All foods in cooler were put there recently and no product in cooler is held over night, per cook and owner. Owner and cook moved all food into working walk-in cooler and lowered temperature of prep cooler. Temperature logs of prep cooler need to be maintained for 3 days and then sent to TCHD.
  • Observed meat loaf in walk-in refrigerator that was labeled 8/2. All potential hazardous foods that are ready to eat must be discarded after the 7th day. Discussed date labeling with owner, meat loaf was voluntarily discarded.
  • Observed food and food contact surfaces being stored in shed. Shed had exposed rafters, unsealed floors, unfinished woods shelving, and exposed insulation. TCHD is requiring that no food be stored in the shed unless it is brought into compliance with the food code. All food contact surfaces being stored in the shed must be removed once their packaging is opened.
  • Observed ice scoop stored in ice. Ice scoop must be stored with handle up to minimize bare hand contact with ice.
  • Observed handsinks used in front and back of facility for food prep and sanitizer buckets. These must be only used for handwashing.
  • Observed food contact surfaces with damage that does not allow for proper cleaning. The stove located in kitchen has build-up in a break on front of stove, kitchen counter has paint chipping, shelving under ketchup is damaged and paint chipping, handles on coffin freezers are broken, and the counters need to be resealed to the wall. Replace, repair, repaint, or reseal all food contact surfaces as needed. Observed tape used to repair counter in service area. Tape is not an approved method of repair, as it effects cleaning. Repair.
  • Observed untreated wood in facility behind ice machine. This wood is absorbent and not easily cleaned. Repaint, reseal, or replace. Drawer located in service area has had the face removed and exposed wood. Repair to allow for proper cleaning. Surface of coffin freezers and coolers have chipping paint and damage. Repair or replace to ensure proper cleaning.
  • Observed chlorine concentration less than 50 ppm in sanitizer buckets. Must be maintained between 100-200 ppm. Employee corrected immediately.
  • Observed visible build up of debris around ice machine and on outlets throughout kitchen. Clean routinely.
  • Observed leak in soda lines located beneath soda machine in service area. Per manager, a plumber has been contacted for repair. Observed duct tape used on pipes located in service area, under counter in dishroom. Duct tape is not an approved repair method, contact licensed plumber to have these repaired.
  • Observed openings to outside of facility that allow for pest entry. Observed hole in window screen located in dishroom and an opening in the side of the screen door. Repair.
  • Observed damage to wall and floor junctures throughout dish room that provide pest harborage areas. Repair.
  • Observed floor damage throughout facility that do not allow for proper cleaning. Repair.
  • Observed visible build up of debris on floor throughout facility, especially behind and underneath equipment. Clean floors routinely.
  • Observed visible build up debris located throughout the facility, especially underneath and behind equipment. Clean walls and ceilings routinely.
  • Employees must receive food handler training within 30 days of hire. All food handler certification must be held on site.

  • Found milk in bulk milk dispenser at 46°F. Maintain at 41°F or below. Manager discarded the milk and contacted the repairman to fix the machine.
  • Found homemade tuna salad in a container in the walk in cooler labeled 4-5-15. This food was past its 7-day use and was discarded by the manager.
  • The laminate counters in the kitchen are very worn. Replace them.
  • Replace the missing drawer front to the cabinet in the waitstaff area. Repaint the kitchen cabinets that have peeling paint.
  • The kitchen cabinet next to the fryer had a build up of grease and debris. Clean and sanitize it.
  • Found build-up of debris on floors. Clean the floors.
  • Found damaged/missing floor tiles. Replace them.
  • Replace the peeling caulk in the walk in cooler, clean and repaint the door frame to the walk in cooler, repaint the chipping wall in the dishroom, and replace the missing base coving under the 3-compartment sink.
  • Food and grease and debris build up on the walls in the walk in cooler and kitchen. Clean the walls.
  • No cool down charts were available at the time of the inspection. The manager stated his wife was not here but he will have her send in 2 weeks worth of these charts to TCHD, Attn: Kim.
