- Observed paint beginning to chip and rust forming on the white ice scoop holders at all the waitress stations and bar ice machines. Since these holders come in contact with food contact surfaces, they are considered food contact surfaces must be maintained in good repair and easily cleanable. Replace.
- Observed paint beginning to chip on back exit door in kitchen around the push bar and handle. Repaint, reseal, or replace to allow for proper cleaning.
- Observed dumpster open at time of inspection. Manager closed dumpster at time of inspection. Ensure that the dumpsters remain closed at all times to prevent rodent/pest entrance.
- Observed a build up of debris in the following areas of the floor: underneath shelving and corners of the walk-in coolers and freezer, in front of the walk-in coolers and refrigerators, floor drain in front of dishwasher, and underneath dishwasher. Clean as routinely as necessary, and ensure employees are cleaning in the more difficult areas.
- Observed seal on the metal platform underneath walk-in doors to have missing seal. Repair seal to allow for proper cleaning.

- Observed queso cheese individually portioned out and each individual portion labeled 10/6/2015. Per the manager, the establishment does not do any portioning of queso dip as it is made per order. The manager discarded all the queso dips and stated he will train his employees on the matter. All items held past 7 days must be discarded.
- Observed damaged cutting boards throughout facility. Replace damaged or discolored cutting boards to ensure proper cleaning.
- Observed paint beginning to peel and chip away on the back exit door in kitchen and on the handle of the beer cooler in the bar. Paint or reseal to allow for proper cleaning. Observed a gap between the stainless steel backsplash and the wall in the mop sink area. Seal the backsplash to the wall to deny moisture and debris access. Observed damaged to shelving in the outside expo area. Repair to allow for proper cleaning. Observed stickers beginning to peel in the facility on surfaces. Once stickers begin to peel, replace them to ensure proper cleaning.
- Observed the handsink in the waitress staff area blocked in a corner by a garbage can. Hand sinks must be accessible at all times to ensure proper handwashing. Manger removed garbage can from in front of handsink and provided a small garbage can below.
- Observed caulking on the floor to wall covings to become damaged. Replace all caulking on the floor to wall covings to prevent water and debris from entering.
- Observed debris along corners and under equipment throughout facility especially below and behind the ice machine and in front of the walk-in freezer.
- Observed build up of debris on wall on side of the hand sink in the front counter. Provide a seal along side to prevent entrance of water or debris or clean routinely to prevent build-up.
