- Plumber had just left location at time of inspection. Water had been run for dishwashing. Hot water at three compartment sink was only reaching up to 101 degrees F. Ensure hot water is monitored and that temperature of hot water is able to reach up to 110 degrees F.
- Observed storage area where deli tissue wrappers are stored, to have much debris. Observed sliced cheese, being stored in cold hold unit, being stored on water/debris. Ensure that all surfaces where food and single use items are stored, to be clean and free of debris.

- Observed personal cups with personal beverages on table tops where food is prepared, in back area. Enusre that all personal foods, beverages and items are stored away from any food and food service/prep areas. Personal beverages should be stored in a cup with a lid and straw to prevent contamination.
- Certified Food Manager certification was not present at time of inspection. Manager stated it was misplaced and that it is valid until 2015. Certification not present upon request. Ensure to have certificate/copy of certificate present and available at all times at establishment. Ensure all certificates are registered with the city, which can be done at 1901 S. Alamo, Monday through Friday between 7:45am and 4:30pm, for a fee of $15.45
- Observed cold hold units where condiments are stored to be dirty with food and grime debris. Ensure to thoroughly clean and properly sanitize all units to ensure that all debris and food is removed to prevent cross contamination of foods used for service of customers.
- Observed spatulas being stored in between rack and wall, above three compartment sink. Corrected on site. Ensure to store all dishware and utensils in a clean and properly sanitized container or on a clean and sanitized surface.
- Observed clean dishware and utensils being stored in container, on clean dish rack, next to three compartment sink. Container where utensils were being stored on, was dirty with black debris. Explained to manager that all dishware and utensils should be properly washed and sanitized and then air dried to prevent pooling water and debris in containers.
