- Ensure proper use of gloves and proper handling of ready-to-eat (RTE) foods. Found employee wearing gloves while cleaning and changed task to handling RTE foods without first removing gloves, washing hands, and re-donning gloves.
- Ensure food contact surfaces (FCS) are clean to sight, touch and are maintained smooth, easily-cleanable, non-absorbant, and durable. Found utensil holder at grill and fry stations with food/oil accumulation. Wash/rinse/sanitize utensil holders. Found food and oil accumulation on bun toaster, and hot dog warmer surfaces.
