  • Utensils in to-go area such as ladles and tongs are dirty. All food contact surfaces must be cleaned/sanitized to avoid bacterial growth and cross-contamination.

  • Employee food and drinks found next to food prep areas including by tea preparation area and under counters next to food and food preparation containers. Employees should keep food and drinks in a designated area away from food for customers and food preparation areas.
  • 1. All foods in refrigeration and freezer units must remain covered to prevent cross-contamination. Ice cream in refrigeration unit under machine found uncovered. 2. Commuted onions in refrigeration unit found contaminated with black substance. Onions disposed of. 3. Ice scoop is being stored on wire rack next to boxes and other unclean items. Ice scoop must be stored properly on clean and sanitized food-grade surface. 4. Cleaned lids are being stored in dirty container that collects rinse water. Lids must be stored in cleaned and sanitized container and allowed to air dry. 5. Scoops must be properly stored in dry goods containers with handles up to prevent cross-contamination. 6. Proper scoop must be provided for batter.
  • All foods in refrigeration unit must be marked with use by date according to establishment's HACCP plans. Refrigerated, ready-to-eat food not properly marked with a use by date.
  • Employee seen washing and rinsing wares but not using sanitizing step. All wares and utensils must be wash, rinsed and sanitized using proper 3 step procedures as directed by company policies and procedures.
  • 1. Covered trash receptacle must be provided for women's restroom. 2. Leak under 3 compartment sink at waitstaff delivery stations must be repaired.
  • 1. Inside of ice machine found with mold/mildew. Inside of ice machine must be cleaned and sanitized. 2. Cutting and slicing equipment used to slice onions, tomatoes, lemons and limes were found dirty with dried food particles. This equipment must be cleaned and sanitized properly. 3. Washed mustard bottle and other food storage and food service items were found dirty. All items must be washed and sanitized properly and free of food build-up.
