- Shredded mozarella cheese in undercounter reach-in cooler at 50 degrees F, italian sausage and other meats used as toppings for pizza are at 62 degrees F stored in plastic containers ontop cooler at ambient temperature. **Provide that all potentially hazardous foods are maintained at 41 degrees or below for cold hold.
- Cooked pizzas/pizza rolls are taken out of oven and placed on counter for display at ambient temperature. **All prepared potentially hazardous foods must be maintained at 135 degrees or above for hot hold.
- No physical barriers used and no documentation for use of barehand contact with ready-to-eat food. **Use physical barriers (discontinue barehand contact with ready-to-eat food or provided documentation as specified.
- Several items in coolers such as shredded cheese, lasagna, other items not date marked. **Date mark prepared potentially hazardous foods not used within 24 hrs with a 'use by' date; max of 7 days to include preparation date.
- Several chemicals (Lysol, WD40) were stored above ice bucket and (bottles of Windex) above preparation table storing meat slicer and tea dispenser. **Do not store toxic chemicals above/next to food contact surfaces or equipment (COS).
- Visible debris at edges of ice machine lid. **Clean and sanitize inside of ice machine including edges of lid and behind panel.
- No certified food manager on duty. **Ensure to have a certified food manager on duty during operation of establishment.
