  • Wash and don new gloves whenever one changes from one task to another such as immediately before engaging in food preparation, working with exposed foods, clean equipment and utensils and unwrapped single service and single use articles.
  • Two of the hand washing sinks do not have cold water. The hand sink next to the baking oven reaches a hot water of 98 degrees F. All hand sinks must reach 100 degrees F and have cold water. (2) Hand washing facility, installation. (A) A hand washing lavatory shall be equipped to provide water at a temperature of at least 38 degrees Celsius (100 degrees Fahrenheit) through a mixing valve or combination faucet.
  • Date mark refrigerated, ready-to-eat food that is frequently unwrapped or dispensed using an acceptable method. Cucumbers in manufacture package has January date. Cucumbers in the refrigerator have February date.
