  • All foods in the refrigerator were ~55F degrees. All potentially hazardous foods must be kept at 41F degrees or below. Manager stated the door was left open over night.
  • Produce in refrigerator (lettuce) was not in sound condition. Heads of lettuce that have molded need to be discarded.
  • Observed young and adult roaches in back room with sinks and ice machine. Manager stated pest control comes monthly to spray establishment. Ensure extra necessary measures are taken to reduce the presence of insects including, cleaning of floors, wall, celings and sealing up any holes/cracks throughout establishment.
  • Observed items being stored inside the 3 compartment sink. Ensure that items are not stored inside any sinks. 3 compartment sink may only be used for ware washing of utensils.

  • Observed fruit cups and bags of ice without labels. Ice bagged and fruit cups made on site must have a manufacturers labels with contact information including name, address and/or phone number.
  • Hot water only reached a temperature of 80F degrees. Hand sink must reach 100F degrees and the 3 compartment sink must reach a minimum of 110F degrees.

  • Observed moldy limes, onion and a potato. Ensure that all produce is discarded once it is no longer in sound condition or safe to consume. Owner discarded the molded produce.

  • Temperature of cooler that holds milk exceeded 50F degrees. Owner states cooler was repaired the morning of the inspection but hadn't reached 41F degrees or less yet. Milk was moved to large cooler. Potentially hazardous foods such as milk that are held cold must be 41F degrees or less at all times to avoid bacterial growth
  • 3 compartment sink is not plumbed. Since establishment is bagging ice and selling cucumbers the 3 compartment sink must be fully functionaly for manually washing, rinsing, and sanitizing equipment and utensils.
  • Observed black grime inside ice machine. Ice machine must be cleaned and sanitized accordingly to manufacturer's instructions
