- Establishment must generate some type of log or written procedure on defrosting of hot wings. Hot wings are currently being left out on shelf to defrost. However, no way for inspector to know length of time they are being left out at room temp. Perfered methods of defrosting are in cooler, microwave, under cold running water, or cooking product while still frozen.
- Hand washing sinks was turned off during business hours, due to small leak. Hand sink must be repaired and accessible to employees at all times.
